Monte Azul, named after the unmistakable color of the blue agave fields in the Tequila Valley of Jalisco, Mexico. This tequila is made from 100% Agave Tequilana Azul Weber from the Tequila Valley. Agaves are individually harvested by hand upon reaching full maturity. On average, the blue agave is 9 years old ensuring they meet the strict standard for Monte Azul. The agaves are slow-cooked in Auto-claves for 18 hours, then shredded in a roller mill. The fermentation process takes place over several days using slow, temperature-controlled vats, then double distilled.
